The yam is a staple food of Caribbean countries, especially Africa. The island like Equatorial Guinea love to add yam daily as a healthy lunch or dinner. Yams have tough brown skin and the flesh is of different colors-yellow, purple or white. Looking at the flesh of yams, you get to know about their varieties. In America, “YAM” the word is described to sweet potato and orange.

Chicken Tagine

Ingredients:
- 5 cloves garlic
- 2 Spanish onions
- 1 bunch flat leaf parsley and coriander
- 1 lemon juiced
- Coriander powder, cumin powder, turmeric powder and chili powder according to taste
- 2 tablespoon olive oil for cooking
- ½ cup virgin olive oil
- 2 carrots, chopped into square pieces
- 1 whole chicken, chopped into sauté style pieces
- 2 tablespoon honey
- 1 small yam, chopped into big pieces
- Salt to taste
- Small handful of black olives
- 9 fresh dates, stones removes
- 1 preserved lemon
- Stock or water
Method:
Once the ingredients are ready it will take 1 hour to cook. No doubt, you need to do special marketing for the dish as some items are usually not available at home.
First, you need to make a thick paste by grinding ingredients- the cumin powder, turmeric powder, Spanish onion, black olives, garlic and coriander.
Once the grinding is done, the thick paste is ready to cover the chicken and marinate it for at least 2-3 hours.
Take a deep pan to heat the olive oil and gently add the marinated chicken to the pan to sauté for a couple of minutes- 10 minutes.
After that add preserved lemon, vegetables and honey. Stir all the ingredients well in the simmer flame.
Now add the stock or water to cook chicken for at least 30 minutes or more, until vegetables and chicken go tender.
This is the easy recipe that will serve with parsley and dates decoration. You can serve the dish with rice for getting an excellent combination.
